Honey and Chili Grilled Artichokes

Ingredients:
4 artichokes
1/2 cup wildflower honey
3 anchovy fillets
1 tablespoon Worcestershire sauce
1 teaspoon salt
3 red fresno chilies, chopped
1 1/2 teaspoons chili flakes
3 cloves of crushed garlic
2 tablespoons red wine vinegar
olive oil
To prepare the artichokes, using scissors or a knife, cut off the points of the artichoke flower, approximately 1/2 inch from the top. Remove the fuzzy choke that surrounds the hearts of the artichokes, then rub the artichokes with lemon to prevent oxidation.
Steam the artichokes over boiling water for 25 minutes (30 if they’re really big, 20 if they’re smaller). While they’re steaming, prepare the honey chili mixture by combining honey and chopped chilies in a sauce pot over low-medium heat. Simmer for 5 minutes. Remove from the heat and add chili flakes, crushed garlic, anchovies (broken apart), Worcestershire sauce, salt, and red wine vinegar.
Remove them from the steamer and dunk in bowl of ice to stop the cooking. Slice the artichokes in half longways. Dry the artichokes and then rub them with the honey chili mixture — getting it in all the cracks and between the petals as you’re able.
Brush a thin layer of olive oil over a medium-high grill, and grill the artichokes charred side down for 3 minutes or untiled slightly charred (be careful the honey doesn’t burn), flip and finish for 2 more minutes. If the honey begins to burn, turn off one set of burners and set them to that side to finish cooking.
