Orange Blossom Honey Orgeat

Orgeat is an almond syrup used in tiki drinks like the Mai Tai. It’s also great in aromatic drinks, like an Old Fashioned. Here is our take on an orgeat using orange blossom honey…
2 cups almonds (raw, rough chopped)
1.5 cups orange blossom honey
1 cup water
1 oz. neutral spirit (vodka)
Roughly chop the almonds into big pieces, and toast them in a pan over medium heat until aromatic, stirring or tossing the whole time so they don’t burn. Once they’ve cooled, blend or food-process them into a coarse powder. Combine the honey and water in a saucepan over high heat until it boils, then add the almond crumb and simmer on medium-low, stirring every 30 seconds, until it is close to boiling. Take it off the heat and let it hang out at room temperature for a couple of hours. To strain it, combine a fine sieve with cheesecloth and pass it through. You can try coffee filters if you want to clarify it more, but that isn’t worth the hassle. Add your ounce of neutral spirit to the mixture, and it’s good to go. Keep it cold for up to 3 weeks.
